For all of those of you who have either wondered for years how to make the veggie burger, or perhaps just saw us on the Food Network, here’s the plan. Let us know in the comments how things worked out for you!
The Farm Café’s
Farmhouse Veggie Burger
Serves 4
2 whole eggplant, peeled and 1 inch diced
2 scallions chopped
1 Tbs minced parsley
1 cup shredded medium cheddar
1 cup bread crumbs
¾ tsp black pepper
1 tsp minced garlic
¼ tsp salt
3 Tbs olive oil
Sauté eggplant on low heat till grey and very soft.
Mix together eggplant and all the rest of the ingredients, except oil, let rest for ½ hour in refrigerator.
Form into 4 equal patties about an inch thick.
In a sauté pan, heat olive oil until shimmering hot, fry each side of patty till dark brown, about 5 minutes each side.
Serve on locally made sandwich bun with caramelized onions, spicy brown mustard, roasted red peppers and salad mix.

I first saw about the Farmhouse Veggie Burger tonight on Food Network. I just want you to know how nice it is of you to publish the recipe for the Veggie Burger for those of us who cannot come to your state to try them. I’m going right out to buy the ingredients so I can try these wonderful looking burgers! Thank you so very much!
I just saw the Farm House Veggie Burger on Foodnetwork’s “The Best Thing I ever Ate” Burgers and immediately did a search for the recipe. thank you so much for posting it and I am going to make the recipe for Super Bowl Sunday along with Bobby Flay’s Green Chili? I will post my comments after I try it out, but I can already tell by your list of ingredients that this is going to be a killer veggie burger and my mouth is watering as I type this. thank you Farm Cafe for sharing your culinary magic secrets and I’ll write you after next weekend. thanks for posting this! I did see the show and have been looking for a similar recipe. Little did I know I would find the real thing. I will post how it turns out. Hopefully I can try the real thing next time I make it to Oregon.
Had made this from observation when the episode first came out, and just loved it. Am so pleased to have the recipe now. I’ve started growing eggplants for just this purpose. Would love to find another vegetable that would serve the purpose as well.

This sandwich was really awesome. Dh kept telling me a burger has meat on it, but even he went back and had seconds. I got 6 patties out of the recipe and had to use green onions in place of scallions. REALLY good and I’ll definitely make again.
I had your burger about a month ago when visiting Portland, and it was ridiculous! I’m moving to town, so I’m excited to have it again at your lovely restaurant…. but until then, I’m making do with my own attempts. The choice of eggplant is genius. For my vegan friends, do you have any suggestion for a binding agent other than cheese (don’t get me wrong, I LOVE cheese, just want to be a gracious hostess…)?
